Ingredients

cups chopped onions
6
small cans mushrooms
4
lb Chicken Cutlets
2
cups flour
1
chicken bouillon cube
2
cups hot water
1/4
cup ketchup
2
bay leaves
1
tsp Basil
1
tsp Oregano
1
tbsp Garlic Powder
Directions
1.
In large saucepot (I use 8 qt) put small amt of oil and sauté 2 cups chopped onions, before too translucent add 6 small cans mushrooms and continue to fry on low.
2.
Cut 4 lbs chicken cutlets (2 bags of empire boneless, skinless chicken cutlets) in 1/3’s.
3.
Mix 2 cups flour, 1 tbsp paprika and 2 tsp salt with some ground pepper in bowl.
4.
Dip chicken into flour mixture and sauté briefly in separate pan with oil, about 2 minutes each side till brown.
5.
As the pieces are finished remove from pan and put into saucepot on top of vegetables.
6.
Mix 1 chicken bouillon cube with 2 cups of hot water and pour on top of chicken.
7.
Add about ¼ cup of ketchup.
8.
Add 2 bay leaves, 1 tsp basil, 1 tsp oregano and 1 tbsp garlic powder
9.
Simmer fillets covered for 40 minutes, sauce thickens slightly, mix occasionally while cooking.
