Beef Stroganoff

Ingredients
1 1/2
lb fillet of beef cut into thin strips
1
medium onion chopped fine
1/2
lb fresh mushrooms wiped with damp cloth and sliced thin
1/2
lb butter
1
-pint sour cream
1
tbsp Italian tomato paste
Juice of ¼ lemon
1
tsp salt
1/4
tsp pepper
1/2
tsp paprika
Directions
1.
Heat 1/3 of butter in a skillet over full heat until golden brown
2.
Add ½ meat and brown on all sides
3.
Transfer to a large shallow casserole dish
4.
Add another 1/3 of butter to the skillet and brown rest of meat, add to the casserole dish
5.
Brown the onion and the mushrooms in the remaining butter
6.
Stir in the tomato paste and paprika
7.
Mix in the sour cream and pour on the meat in the casserole dish
8.
Cover and simmer in a medium oven at 350 F for 15 minutes
9.
Add lemon juice, salt and pepper. Stir well.
10.
Notes: The meat is juicier if seasoned at the end.
