Cook
Serves 4people
Ingredients
4
boneless pork chops (about 1 inch thick)
1
tsp kosher salt
1/4
tsp freshly ground black pepper
2
tsp of extra virgin olive oil
1/2
cup apple cider
Directions
1.
Measure ½ tsp. of the salt, and 1/8 tsp of pepper, pinch and sprinkle over the tops of the pork chops
2.
Turn the pork over and season the same way with the remaining ½ tsp salt and 1/8 tsp pepper
3.
Place your large skillet on the stove and turn the heat to medium
4.
Measure and pour in the oil and heat until it shimmers
5.
Using tongs, add the pork chops
6.
Cook until the undersides are golden brown
7.
Using tongs, flip and continue to cook until an instant-read thermometer inserted into the center through the sides reads 145 F
8.
Use your tongs to hold each pork chop on the side to sear the fat
9.
Transfer the pork chops to a plate
10.
Measure and pour the apple cider into the skillet and return it to medium-high heat
11.
Using a wooden spoon, scrape up the yummy browned bits from the bottom of the pan
12.
Let the cider simmer for about 3-5 minutes to thicken it just slightly
13.
Spoon it over the pork chops
