Lamb, Tomato & Ricotta Penne

Quick and easy lamb pasta dish

Ingredients

gm Penne Pasta

tsp Olive Oil
1/4
Onion, finely diced

gm Button Mushrooms, Finely sliced
1
can Tomato (chopped)

gm Lamb Mince
100
gm Ricotta
Directions
1.
Cook the penne pasta according to the packet instructions.
2.
Heat a fry pan over a medium heat. Add the olive oil, onion and mushrooms. Cook for approx 3-5 mins or until lightly fried.
3.
Add the lamb mince and continue to cook until the lamb is browned.
4.
Add the tomatos and cook for a further 2-3 mins.
5.
Add the penne and stir to combine. season to taste with Salt and Pepper.
6.
To serve, divide between two bowls and top with crumbled ricotta.
