Chicken Kiev

Ingredients
4
chicken breasts

butter room temperature
1/4
cup sliced scallion
1
tsp dried parsley
1
tsp dried tarragon
1
tsp kosher salt, plus extra for seasoning chicken
1/4
tsp freshly ground black pepper, plus extra for seasoning chicken
2
large whole eggs, beaten with 1 teaspoon water
2
cups panko
vegetable oil, for frying
plastic wrap
Directions
1.
The dish will be made with an herb butter stuffed into the chicken, sauteed until done
2.
Mix the softened butter, parsley, scallion, tarragon, salt, and pepper well in a bowl.
3.
Season each piece of chicken with S&P then divide the butter mixture between the 4 chicken breasts
4.
Fold the seams of the chicken over and wrap the each very tightly in plastic wrap to form a sealed log.
5.
Refrigerate for at least 2 hours.
6.
Remove the chicken form the wrap, dip in the egg mixture and then panko.
7.
Saute seam side down and turn every 5 minutes until cooked through at 160 degrees.
