Aunt Jemima Whole Wheat Banana Bread

Ingredients

cup all-purpose flour

cup Aunt Jemima Whole Wheat Blend Pancake & Waffle Mix
1/2
cup walnuts, chopped
1-1/4
tsp baking powder
1/2
tsp baking soda
1/2
cup granulated sugar
1/3
cup vegetable shortening
2
eggs, slightly beaten
2
tbsp skim milk
1
cup ripe bananas, mashed (about 2 medium)
Directions
1.
Preheat oven to 350° F.
2.
Spray 8"x 4" loaf pan with nonfat cooking spray.
3.
Combine flour, mix, walnuts, baking powder and baking soda in large bowl. Set aside.
4.
In mixer bowl, combine sugar and shortening on medium speed for 1 minute. Add eggs and milk, mix 1 minute or until smooth.
5.
Add flour mixture and bananas alternately, mix just until dry ingredients are incorporated.
6.
Pour into prepared pan. Bake 50-55 minutes or until toothpick inserted in center comes out clean.
7.
Cool in pan 5 minutes. Remove from pan: cool completely.
