Turkey Chili

Ingredients

tbsp olive oil
1
lb of ground turkey (I buy lean)
1
yellow or white onion, chopped
2-3
cloves of garlic, minced
2
large carrots, chopped
2
ribs of celery, chopped
1
bell pepper (any color), seeded and chopped
1
tbsp chili powder, 1 tbsp paprika, 2 tsp paprika, 1/2 tsp salt
few dashes of hot sauce

oz box chicken broth
29
oz diced tomatoes with oregano or any spices you think would fit

oz can of refried beans
15
oz can of red kidney beans
Directions
1.
Over medium-high heat, add your 1-2 tbsp olive oil, brown the ground turkey. Drain the liquid when finished and set aside.
2.
In a large pot, coat the bottom with 1-2 tbsp olive oil. Over medium heat, cook the onion until clear (not brown), about 5 mins. Add your minced garlic and cook just the onion and garlic together for about a minute stirring frequently.

Add your celery, carrots, and pepper and cook while stirring for about 5 mins.

Add all remaining spices, salt and pepper as liberally as you like, for 1 min.

Stir in broth, tomatoes, both types of beans, and turkey. Bring this mixture to a boil, then reduce heat to low and simmer for at least 30 mins. Be sure to keep an eye on it and continuously stir your mixture.
6.
Serve with shredded cheese, jalapenos, and sour cream.
