Shrimp & Corn Soup

Got this recipe from Debbie Jenkins - it was from her father.

Ingredients
1/3
cup oil
2
med onions (chop fine)
1
lg. bell pepper coarsely chopped
2
tbsp parsley
1
lb medium shrimp (peeled)
salt, black, and red pepper to taste
1
lb can whole peeled tomatoes undrained
1
lb can whole kernel corn (drain 1/2 liquid)
Directions
1.
Make roux with oil & flour. When roux is golden brown, add onions and cook for 10 - 15 min. Add bell pepper, shrimp, parsley, salt & pepper. Simmer 5 - 10 min. Add corn, tomatoes, & 1 cup water. Simmer at least on hour. Add more water until desired consistency.
