Roasted Asparagus

Light and healthy, roasted asparagus is an easy side dish to serve with any entree.

Ingredients
1
bundle asparagus
1
lemon
handful of rosemary sprigs
2
tbsp olive oil
salt and pepper to taste
parmesan cheese to top
Directions
1.
Preheat oven to 400F
2.
Thinly slice half of the lemon
3.
Prep the asparagus shoots, and spread them along with the lemon slices and rosemary on a parchment paper lined baking sheet
4.
Toss all with olive oil, as well as salt and pepper, you can add any other desired seasonings
5.
Squeeze juice from remaining half of lemon on to asparagus
6.
Roast in oven for 8 minutes, carefully turn asparagus over and continue roasting for 7-8 minutes. Watch for preferred tenderness, add additional time if needed, total time should be 15-20 minutes
7.
Serve warm
