Cheddar Walnut Loaf

Ingredients

eggs lightly beaten

cups grated cheddar

cups coarsely chopped walnuts

cup cooked brown rice
1/3
cup minced parsley
1
med onion chopped
1
clove garlic

cup coarsely chopped mushrooms
Directions
1.
Preheat oven to 350 degrees. Butter a 9x5 loaf pan, then line the pan with wax paper or parchment paper. Butter the paper. Combine all ingredients in a large bowl. Mix well and spoon into loaf pan. Bake one hour or until loaf is quite firm. Let stand about 10 minutes before unmolding onto a platter. Spoon mushroom sauce over the loaf.
