Cheesy Fish Bake

Family favourite that is often requested when celebrating a birthday or other special occasion. Hearty food and a great way to enjoy fish

Ingredients

lb cod fillet, skinned
1/2
pt fresh milk
1
bay leaf
1
oz flour
1
oz butter
4
ozs English cheddar, grated
salt and freshly ground pepper
1 1/2
lb potatoes cooked and sliced

ozs can anchovy fillets, drained
Directions
1.
Place fish in a saucepan with milk and bay leaf
2.
Bring to the boil and simmer for 15 minutes or until fish flakes easily
3.
Drain, reserving liquid. Flake fish. Discard bay leaf.
4.
Make fish liquid up to ½ pint with extra milk
5.
Place fish liquid, flour, and butter in a pan, heat whisking continuously until sauce thickens, boils and is smooth.
6.
Stir in the fish and half the cheese. Season
7.
Arrange half the potatoes in a greased oven-proof dish
8.
Pour over the fish sauce and cover with remaining potatoes
9.
Sprinkle with remaining cheese. Arrange anchovies in a lattice pattern over cheeses.
10.
Bake at 200C / 400F for 30 minutes
