Roasted Stuffed Flank Steak

Place flank steak in freezer 20 - 30 min until firm but not frozen. Butterfly with short end facing you, make horizontal lengthwise cut, slicing almost through to other side. Open like a book and push to flatten.

Cook bacon until crisp. Drain and crumble into small bowl. Save 2 tsp bacon fat and cook garlic 30 sec. Add to bowl. Stir in bread crumbs, parsley, 1/2 tsp each salt and pepper.

Preheat oven to 350 degrees. Sprinkle meat with oregano and 1/2 tsp each salt and pepper. Cover with spinach, roasted peppers and crumb mixture, leaving a 1/2" border. Roll up from short end; tie with string.

In large, ovenproof skillet, heat oil. Brown beef. Transfer to oven and roast 25 min without turning. Let rest 20 min before slicing.
