Grilled Veggie And Mozzarella Panini

eggplant

zucchini
1
red pepper

slice(s) ciabatta bread

cup(s) mozzarella
1
bunch(es) basil leaves
Directions
1.
Whisk vinegar, oil, salt and pper. Coat baking sheet with cooking spray and place veggies in 1 layer. Brush veggies with vinegar mixture and broil 7-8 minutes, turning once. Brush bottom slices of ciabatta with vinegar mixture. Pile veggies, cheese, and basil on 4 slices of bread. Close sandwiches and spray both sides with cooking spray. Heat on skillet, pressing down with spatula to flatten. Cook 4 minutes, flipping once.
