Gluten Free Enchiladas

Ingredients

6 pieces chicken tenderloins
4
ozs Cream cheese
4
ozs sour cream
1
can cream of chicken soup
1
can green chiles
1
can corn
1
can black beans
1
medium onion chopped
taco seasoning chili powder, cumin to taste
package corn tortillas
shredded cheese
can red enchilada sauce--1.5-2
cilantro (optional)
Directions
1.
Boil chicken in water
2.
Meanwhile, heat corn tortillas on stove
3.
Sauté chopped onion and chilis in oil
4.
Shred chicken when cooked through
5.
Combine chicken, soup, cream cheese, sour cream, corn, black beans, chiles, and onion
6.
Season with several dashes of spices
7.
Add some shredded cheese to mix
8.
Fill tortillas generously, roll, and put folded side down in greased 9x13 pan

Pour enchilada sauce over the top
10.
Sprinkle generously with cheese to top

Cover
12.
Bake at 350 for 30 min.

Serve with sour cream and cilantro
