Short Crust Pastry

Ingredients

tbsp (8 oz) flour
pinch salt
8
tbsp (4 oz) fat
cold water to mix
Directions
1.
Sift flour and salt. Put in fat and break into pieces w/ fingertips. Rub fat until it is of breadcrumb consistency. Raise hands high to get cold air in. Add water slowly, using just enough to make mixture bind when stirred. Use rounded knife and knead gently into a smooth ball.
