Ginger Spiced Peach Upside Down Cake

A delicious dessert with a bit of spice

Ingredients

cup cake flour

tsp baking powder

ground cardamom
1/8
tsp salt
1/2
cup (1 stick) plus 3 tablespoons unsalted butter, softened

large eggs
1
piece fresh ginger, about 1 inch square, minced
grated rind of 1 lime
1/4
cup packed light brown sugar

or 3 ripe peaches, pitted, sliced
Directions
1.
Pre-heat oven to 350 degrees

Have ready an 8-inch round layer cake pan
3.
Sift together flour, baking powder, cardamom, and salt; set aside
4.
Beat 1/2 cup butter and sugar with an electric mixer on high speed until light, 2 minutes
5.
Add eggs, one at a time, mixing well after each addition.
6.
Stop mixer and add dry ingredients, ginger, and lime rind
7.
Mix on low speed just until combined
8.
Arrange peaches in pan, in a radial design
9.
Top with batter
10.
Bake 30-45 minutes
11.
Cool in pan for 5 minutes; loosen from sides with small knife
12.
Invert onto wire rack
