Apple Onion Veal Stew

Ingredients
1
large onion, sliced thin
2
yellow delicious apples, peeled cored, diced
oil, butter
3
stalks fresh tarragon or 2 teaspoons dried

lb veal stew meat
1
cup white wine
2
cups chicken broth
3/4
cup mushroom, halved
1/4
cup white wine
1/2
cup heavy cream or mile
salt, pepper
dijon mustard
Directions
1.
Cook onion and apples in oil and butter over medium-low heat 5 minute
2.
Cover and cook another 10-15 minutes

Add tarragon
4.
In separate pan, cool veal in oil and butter until lightly browned. Remove veal with slotted spoon and add to apple mix. Add wine and broth and cook with cover ajar, over love heat 1 1/2 hours or until meat is tender.

To the pan from veal, add mush; cook 5 minutes stirring often; add wine; cover and cook 10 minutes.

Remove tarragon stalk. Remove veal, mush and onion with slotted spoon. Reduce the remaining liquid over high heat until thick enough to coat the back of the spoon.
7.
Pout in any accumulated juices and cook again. Remove from heat, stir in mustard, salt and pepper. Return veal to pan, stir. Serve or store.
