Sesame Chicken In Peanut Sauce

Ingredients
chicken

lb chicken breast

scallions

sliced ginger

tbsp sherry

tbsp salt

tbsp sugar

cups shredded lettuce
sauce
1/2
cup peanut butter
3/4
cup peanut oil
5/8
cup soy sauce
5/8
cup sugar
3
tbsp vinegar
1
tbsp sesame oil
1
tbsp cayenne
4
scallions, minced
1
cup coriander, minced
2
cups dry rice
Directions
1.
Make rice
2.
Place all except lettuce in sauce pan
3.
Bring to a boil and simmer, 20 minutes. Don't overcook!
4.
Let stand until chicken can be handled
5.
Chop then shred chicken with 2 forks
6.
Finely slice lettuce and place on platter
7.
In a large bowl add peanut butter and oil
8.
Blend well together
9.
Add all other ingredients to taste
10.
Add shredded chicken and toss to coat well
11.
Center rice over lettuce in center of platter
12.
Arrange chicken around rice
