Vermont Bean Pot

Ingredients

cups navy beans
8
cups water
6
sliced bacon, diced
1/2
cup chopped onion
1 1/2
tsp salt
1/8
tsp pepper
1
tsp ground ginger
1/2
tsp allspice
2
tbsp cider vinegar
2/3
cup maple syrup
Directions
1.
Rinse beans, do not soak
2.
In a 4 qt. pot combine beans and water
3.
In a medium skillet, fry bacon til crisp, drain on towels. Saute onions in same skillet until tender, not brown
4.
Add onions salt and bacon to beans
5.
Cover and simmer til tender 1 1/2 to 2 hours, add hot water as needed
