Blueberry Coffee Cake

For a 13 x 2 x 9 pan

Ingredients

cups blueberries

cups sugar

tbsp cornstarch

cups flour

tsp baking soda

sticks butter

cup butter

eggs beaten

tsp vanilla

cup flour
Directions
1.
Place fruit in 1/2 cup of water in saucepan

Boil, cover and reduce heat, 5 minutes
3.
Mix 1/2 cup sugar and cornstarch, stir in saucepan
4.
Cook until think and bubbly
5.
In a bowl, stir 1 cup sugar, 3 cups flour, baking powder, baking sugar.
6.
Cut in 1 stil butter til fine crumbs
7.
Combine eggs buttermilk and vanilla, stir into flour until just moist
8.
Layers: Spread 1/2 of mixture in baking pan, spread fruit over it, drop butter in small mounds over fruit
9.
Crumbs: combine 1/2 cups sugar and 1/2 cup flour. Cup in 1/2 stick butter til fine crumbs. Sprinke on top
10.
Bake at 350° 40-50 minutes, until golden brown
