Cream Of Mushroom Soup

Ingredients

cups sliced, mixed variety mushrooms

cups chicken broth

cup chopped onion
1/8
tsp dried thyme

tbsp butter
3
tbsp flour
1/4
tsp salt
1/4
tsp pepper
1
cup cream
1
tbsp marsala
Directions
1.
Saute mushrooms with a bit of butter
2.
Add onions, thyme and broth; cook 15 minutes
3.
Puree mixture; set aside a few mushrooms for chunky
4.
In the sauce pan make roux of butter and flour, adding cream
5.
Add salt, pepper and puree
6.
Stir constantly, boil and thicken
7.
Add marsala
