Manacotti

One of Vincent's favorites

Ingredients
shells

cup water
2
cups flour

eggs
1/2
tsp salt
filling

oz ricotta
1
egg
1
tbsp parsley
1/4
cup romano cheese
1/2
tsp salt
1/4
tsp black pepper
Directions
1.
Preheat oven to 350°
2.
In a pouring bowl, mix dry shell ingredients and using mixer add wet ingredients until batter is smooth.
3.
Heat saute pan to medium heat, add a little oil to coat.
4.
Tip pan forward and pour some batter in from the top, shaping into a flat circle
5.
Flip when it starts to bubble
6.
With a spoon, free up edges. Remove when done with tongs to a plate.
7.
Mix together filling ingredients
8.
Decide how to fit manicotti in tray
9.
Put sauce in the bottom of the cooking pan
10.
Put some mixture, roll up, and put in place
11.
Top with sauce and grated mozzarella cheese
