Pagach

Ukrainian/Slovak pagac or pagach (puh-GAHTCH) is traditionally served at meatless meals as for Advent, Lent, and the beautiful Christmas Eve supper known as velija.Pagac is a flatbread with a potato or cabbage filling and makes an excellent vegetarian entrée. Auntie Pauline (great lady,she started the two dollar bill tradition, she never married nor had children, she loved her nieces and nephews--- she retired from Ohio Bell as an phone operator) used to make this recipe all the time for Nana, Aunt Virginia and their families.

Ingredients

cup warm water
1
tbsp sugar
2
dry yeast, soak a few minutes
1
cup scalded can milk
1
tbsp butter
1
tbsp sugar
2
egg yolks
2
tsp salt
6
cups flour
Potatoes
Longhorn/colby cheese (yellow hard cheese)
Directions
1.
Mix butter, milk, sugar, egg and salt
2.
Add yeast mixture
3.
Mix well
4.
Add flour until not sticky
5.
roll thin layer
6.
Put in cookie sheet (line with parchment paper)
7.
Potato mixure (mash cooked potato, salt and colby cheese)
8.
Spread with potato mixture
9.
Roll thin layer for top
10.
Prick dough for fork
11.
Bake 350 for 20-30 minutes, depending on thickness
12.
When baked, rub wtih butter and cover
