Chocolate-Coffee Rum Cake

Ingredients

cup espresso
1/2
cup water

tbsp rum

oz semi-sweet chocolate

lb cake

eggs separated
1 1/2
cups heavy cream
1
cup berries
Directions
1.
Dissolve 1 tablespoon sugar into coffee
2.
Add water an rum
3.
Melt chocolate in double boiler
4.
Slice poundcake into 1/4 inch slices
5.
Line loaf pan with slices
6.
Dab with coffee
7.
Add 2 tablespoons sugar to egg yolks. Whip at high speed until turn pale
8.
Add melted chocolate and mix well
9.
Wash beater clean
10.
Whip egg whites to stiff peaks
11.
Fold whites carefully into chocolate mixture. Add tablespoon or 2 at first

Pour into prepared loaf pan
13.
Cover with remaining pound cake
14.
Dab with coffee mixture
15.
Refrigerate up to 2 days
16.
Decorate with whipped cream and berries
