Italian Flag Cookies

Ingredients

cups blanched almonds

cup 10x sugar

eggs separated

egg separated
1 1/2
cups butter, soft
1
cup sugar
1
cup flour
1/4
tsp salt
1
tsp almond extract
8
oz apricot preserves
6
oz semi-sweet chocolate
Directions
1.
For almond past: blanch almonds
2.
Granulate in processor as fine as possible
3.
Add 10x sugar and 1 egg white
4.
Make into a dough
5.
In a bowl, add almond paste, sugar, egg yolks, extract,salt, butter, beat until fluffy

Add flour
7.
Divide equally into 3 separate bowls
8.
Color two red and green
9.
Pour each into a 12x8 pan
10.
Bake 10 minutes until done

Coll
12.
Put preserves between layers
13.
Cover with plastic wrap, place a weight on top overnight
14.
Cut and serve before chocolate hardens, cleaning knife often
