Rainbow Cake Pops

Who doesn't want their own rainbow in a small bite size cake pop. If you ever need a little bite of happiness or even if you just want to eat something sweet, this is the perfect recipe!

Ingredients

pkg white cake mix
1
small box vanilla pudding mix (sugar/fat free)
1
pkg white candy melts/candiquik
rainbow sprinkles
gel food coloring (red, yellow, green, blue, violet)
stick cake pop
Directions
1.
Preheat the oven to 350 degrees and line a muffin tin with 12 paper liners.

Prepare your cake mix according to the box and stir in dry pudding mix until combined. Divide this batter into six seperate bowls.

Color each bowl with a different color of food coloring until they reach the color you want. (The brighter the better!)

Pour this batter into the lined muffin tins separately. (Don't combine colors just yet.) You should have two muffins in each color. Bake them for 13-25 minutes and allow to coll when done.

When the cupcakes are baked and cooled, crumble the vake by color into six seperate bowls and add a tablespoon or so of vanilla frosting to each bowl. Mix to combine.

To create the actual ball, take a small pinch of each colorand place them into the palm of your hand. Gently shape them into a tight ball. Place the finished product onto a foil lined baking sheet and repeat until all the cake is gone. Place the sheet into the freezer to harden for a couple of hours.

When the cake balls are hardened, begin to prepare your white chocolate according to the package. Once melted and smooth, take a cake pop stick, dip the tip into the chocolate, and gently press into the top of your cake ball. One at a time, dip the pop into the chocolate until completely covered. You may have to turn to coat completely. Allow the excess to drip off and set the pop back onto the baking sheet. OR If you want the pop the be more like a lollipop with the cake at the top, take a piece of styrofoam and force to stick into the styrofoam to hold them upright. Top with sprinkles to your hearts content.

You can store these in an airtight container for up to two days, but who am I kidding, they will be lucky to survive the next couple of hours!
