Funfetti Sugar Cookie Cake

This is just like those giant cookie cakes at the mall! Wait...this one might be just a little bit better. Needless to say, it is the perfect addtion to a birthday party or any other day!

cup unsalted butter, softened

cup sugar

tsp baking powder

tsp baking soda

tsp cornstarch

cup white chocolate chips
1/2
cup rainbow sprinkles
vanilla almond frosting
1/2
cup unsalted butter, softened
1 3/4
cups confectionser's sugar
2
tbsp heavy cream/half and half
1
tsp vanilla
1/4
tsp almond extract
salt, to taste
extra sprinkles for topping
Directions
1.
Preheat the oven to 350 degrees and grease a 9 inch pie dish or cake pan with cooking spray.

In a large bowl, cream the softened butter with a stand mixer or a handheld mixer for one minute on medium speed. Add the sugar on medium speed until light and fluffy. Beat in the egg, egg yolk, and vanilla.

In a medium bowl, stir together the flour, salt, baking powder, baking soda, and cornstarch. With the mixer on low speed, add the this flour mixture to the wet ingredients in the sections until the dough is thick. Once combined, fold in the chocolate chips and sprinkles.

Press the dough into the greased pan. Bake for 25-30 minutes. You want the cookie to be extra soft in the middle just like at the Great American Cookie Factory, so do not over bake! Allow the cookie to cool on a baking rack.

With a stand or handheld mixer, beat the butter on medium speed until creamy. Add confectioner's sugar, cream, vanilla, and almond extract on low. Increase to high and beat for three minutes. You can add more powdered sugar in too thin, more cream if too thick, and a little salt if too sweet.
6.
Pipe the frosting onto the cookie cake however you like and serve it up with ice cream if you want to!
