Chicken "Cousjuice"

The grand prise winner in the Pilsburry Quick & Easy Bake-Off was this internationally flavored main dish. It is truly awesome.

Ingredients

olive oil
4
minced garlic cloves
8
skinless chicken thighs

cups El Paso mild salsa
1/2
cup water
1/4
cup dried currents
2
honey
1 1/2
cumin
1/2
tsp cinnamon
3
cups hot couscous
Couscous is Cooked as directed on package
Directions
1.
while couscous is cooking, heat oil in large skillet over med.high heat until hot. DO NOT TEST THE HEAT BY DIPPING YOUR FINGERS INTO THE OIL!!!!! add almonds; cook 1-2 minutes or until golden-brown. remove almonds with slotted spoon, set aside.

add garlic to skillet; cook and stir for 30 seconds. Add chicken, cook 4-5 minutes or until browned, turning once.

In medium bowl, combine salsa and all remaining ingredients; mix well. add to checken, mix well reduce heat to medium; cover and cook stirring occasionally for 20 minutes or until chicken is fork tender and juices run clear. serve CousJuice over couscous, sprinkle almonds on top.
