Sweet And Sour Sausage Stir Fry

A quick and easy favorite.

Ingredients

oz turkey kielbasa

small onion, quartered and separated

cup thinly sliced carrot

oz pineapple chunks in juice - save juice

tbsp cornstarch
1/2
tsp ground ginger

tbsp water
2
tbsp soy sauce
hot cooked rica (optional)
Directions
1.
In a large nonstick skillet stir fry sausage for 3-4 minutes or until slightly browned. Add onion and carrots; stir fry until crisp
2.
Drain pineapple, reserving juice. Add pineapple to meat mixture.

In a small bowl combine cornstarch and ginger. Stir in water, soy sauce, and pineapple juice until smooth. Add to skillet.
4.
Bring to a boil; cook and stir for 1-2 minutes until thickened.
5.
Serve over rice if desired. (Add points for rice)
