Lizzie's Potatoes By Eva

Email from Lizzie when were asking for favorite recipes. "Eva’s potatoes. I’m sure they’re very simple to make, but they make my heart feel good. I remember when I was pregnant sick with Anna & she sent me some."

Ingredients
4
cup cubed (1/2 inch) russet or Idaho potatoes
1
tsp salt
1
cup milk
4
tbsp butter or margarine
Directions
1.
Place potatoes in pot with just enough water to cover
2.
Add salt
3.
Bring to a boil
4.
Cook uncovered until potatoes are tender and about halt the water has evaporated
5.
Add butter and turn off heat
6.
When butter melts add milk and very gently mix all together
