Turkey Chili

From the Kitchen of Meghan Fair

Ingredients
pam cooking spray
16
oz extra lean ground turkey
1/2
yellow onion, chopped
2
squash, diced (i use a whole onion)
2
zucchini, diced
4
stalks celery, diced
3
sweet peppers, diced
30
oz fat-free chicken broth
1
large can (28 oz) diced tomatoes
1
can black beans, rinsed
1
packet of chili seasoning
1
serrano /jalapeño chili
Directions
1.
Dice all vegetables and set aside in a bowl.
2.
Heat cooking spray and onion over medium heat. When onions are slightly wilted, and ground turkey and brown slightly.
3.
Add all vegetables, broth, diced tomatoes, beans, seasoning and chili peppers.
4.
Stir and simmer for 1 hour (I keep the cover on loosely).
5.
Garnish with cheddar, sour cream, and tortilla chips.
