Mini Mac & Cheese Tarts

I like to use homemade bread crumbs (see recipe)

Ingredients

-oz unsalted butter
3
tbsp flour
2-1/2
cups whole milk
3
cups shredded cheddar and Gruyere cheese combined
1/4
cup parmesan cheese
1/2
lb elbow macaroni. Cooked
12
tartlet shells pre baked
1/4
cup parmesan cheese and Italian breadcrumbs
Directions
1.
Melt the butter then add the flour to make a Roux. Cook for 2 minutes. Whisk in the milk and bring to a boil whisking constantly for about 3 minutes. Stir in the cheese and season with salt and pepper. Stir till smooth remove from the heat. Combine the sauce and macaroni. Mix well and fill the tart shells with the macaroni. Top each one with a sprinkling of parmesan cheese and bread crumbs.

Bake in a 350 oven for 10 minutes or until golden brown on top.
