Pumpkin Bread

I have been making this for years. Everyone loves it, not only at Thanksgiving, but anytime. Great to give a loaf as Christmas gifts or when you are invited for dinner.

Ingredients
1
cup sugar or honey.
1/3
cup butter or margarine.

eggs.
1-2/3
cups flour
1/4
tsp baking powder.
1
tsp baking soda.
3/4
tsp salt.
1
heaping tsp cinnamon.
1
heaping tsp nutmeg.
1/2
cup water.
1
cup canned pumpkin (1/2 can).
1/2
cup golden raisins.
optional – 1/2 cup chopped pecans or walnuts.
Directions
1.
Butter, or spray with cooking spray, one loaf pan. Line with parchment paper for easy removal.

Cream butter or margarine and sugar with electric mixer. Add eggs one at a time, beating well after each addition. Add remaining ingredients and alternate with water (except pumpkin). Then add pumpkin and blend all together. Stir in raisins and/or nuts. Pour batter into a loaf pan.

Bake at 350° for approximately 1 hour (or until toothpick comes out of center clean). Remove from oven and cool in pan 10-15 minutes, remove from pan and let cool on wire rack. Serve or wrap in plastic wrap and foil, and refrigerate.
4.
You can double this recipe and make 2 loaves at once which I usually do
