Canadian Eggs Benedict

Ingredients

lb fresh mushrooms (about 2 cups)

cup onions, finely chopped

tbsp butter
1/3
cup flour

tsp salt

slices Canadian bacon, cooked
6
eggs, poached
1/8
tsp pepper
1 1/2
cups light cream or milk
2
tbsp sweet sherry or madeira

English muffins (6 split halves)
Directions
1.
Sautee mushrooms and onions in butter for five minutes. Sprinkle with flour, salt, and pepper. Mix well. Gradually stir in cream and cook, stirring constantly till thickened. Add sherry or madeira. Makes 2 cups. Butter muffins slightly. Top each with a slice of bacon and a poached egg. Spoon mushroom sauce over muffins.
