Taco Pie

This dish is easy to make and tastes so good! I usually make 2 pies when having 6 people for dinner. You can serve with taco chips and avocado dip, or whatever you like for a festive, colorful meal!

Ingredients
1
lb lean ground beef.
1
medium onion, chopped.
1
package (1 ounce) taco seasoning mix.
1
can (4.5 oz) chopped green chilies, drained.
1
cup milk.
2
eggs.
1/2
cup original or low fat Bisquick mix or Gluten free Bisquick.
3/4
cup shredded Monterey Jack or Cheddar cheese, or whatever you like.
Salsa (any variety).
Sour cream, if desired.

Roma tomato diced for garnish.
Diced lettuce for garnish.

can Mixed chili beans
Directions
1.
Heat oven to 400°F. Grease 9-inch pie plate.
2.
Cook ground beef and onion in 10-inch skillet over medium heat, stirring occasionally, until beef is brown; drain.
3.
Stir in seasoning mix (dry). Spoon into pie plate; top with chilies. Whisk milk, eggs and Bisquick mix until blended. Pour into pie plate.
4.
Bake uncovered, about 25 minutes or until knife inserted in center comes out clean.
5.
Sprinkle with cheese. Bake 8 to 10 minutes longer. Cool 5 minutes.
6.
Decorate top of pie with diced tomatoes and lettuce.
7.
Serve with salsa (mild or medium) and sour cream. (I usually make 2 pies if we have guests).
