Pumpkin Waffle Strips

These pumpkin waffles are a great dish in the fall. The familiar flavor of pumpkin pie spice adds sweetness. Cutting the waffles into strips makes them easy to share and to dip in maple syrup.

cup pumpkin puree

cup blanched almond flour

cup coconut milk

tbsp coconut flour, sifted

tbsp honey
1
tbsp pumpkin pie spice
1
tsp vanilla extract
1/2
tsp baking soda
ghee
maple syrup
Directions
1.
In a medium-sized bowl, whisk the eggs. Stir in the pumpkin puree, almond flour, coconut milk, coconut flour, honey, pumpkin pie spice, vanilla extract, and baking soda, and mix until they are thoroughly combined. Heat a waffle iron. Pour about one-quarter of the batter into the iron, and bake the waffle for 4 minutes. Repeat with the remaining batter. Cut the waffles into 1/2-inch strips, and serve them with ghee and maple syrup.
