Ham And Egg Cups

The ham creates lovely little cups that are easy to pick up and eat, making this recipe perfect for a breakfast buffet.

Ingredients
preheat the oven to 400 degrees. in a large frying pan, melt the ghee over medium-high heat. add the mushrooms and onion to the pan, and saute them for 3-5 minutes or until tender. set them aside
lightly coat a muffin tin with avocado oil. line each portion with a piece of ham. place a spoonful of the mushroom mixture in each ham cup, and crack an egg on top of each cup. bake the cups for 15-17 minutes or until the egg whites are completely cooked

1 1/2 teaspoons ghee

6 mushrooms, finely chopped

1/2 cup finely chopped yellow onion
4.
Avocado oil in an oil mister
5.
12 thin slices ham
6.
12 medium eggs
7.
Freshly ground black pepper to taste
