Norwegian Lompe (Potato Pancake)

Pølse med lompe is a traditional way to serve hotdogs in Norway: it consists of a flat thin potato-pancake wrapped around a steamed, natural casing hot dog. Lompe is also eaten as a treat, rolled up with butter and a sprinkling of sugar. Usually lompe is made from leftover boiled potatoes.

lb Yukon gold potatoes

tsp kosher salt

cup all purpose flour
Directions
1.
Boil the potatoes (unpeeled) in lightly salted water. When cool enough to handle; peel and mash them with salt while they are still warm.

Kneed the mash potatoes with flour - the less flour you use the better the lompe will be.

Roll the dough into a long "sausage," and then divide it into equal sized pieces. Roll each piece into flat circles (about the size of a small frying pan or breakfast plate) and about 1/8 inch think (the thinner the better).
4.
Fry them on both sides in a large, dry and hot cast iron skillet (or a griddle) until they are firm and some brown spots have formed.
5.
Transfer the cooked lompe to a large plate and stack them on top of each other. Cover them with a clean kitchen towel so they stay soft.
6.
Serve! This recipe makes about 12 lompe.
