Blt Cucumber Rounds

Most Americans love a classic BLT sandwich. Substituting cucumber rounds for the bread creates a healthy Paleo version. Cucumbers also add a light, fresh taste that nicely offsets the rich bacon.

Ingredients

lb bacon
1/2
cup shredded romaine lettuce
4
roma tomatoes, finely diced
2
large cucumbers, thinly sliced
reserved bacon grease
extra-light olive oil
2
egg yolks
1
tsp apple cider vinegar
1/2
tsp mustard
1/2
tsp honey
1/4
tsp sea salt
Directions
1.
In a frying pan over medium-high heat, cook the bacon until it is crisp. Remove the bacon from the pan, and reserve the grease in a 1-cup measure cup. Add olive oil to fill to the 1 cup line. In a blender, add the egg yolks, apple cider vinegar, mustard, honey, and sea salt. With the blender on the lowest setting, drizzle in the bacon grease-olive oil mixture. Pour it as slowly as possible to allow the mixture to emulsify.

Finely chop the cooked bacon. In a bowl, mix together the bacon, lettuce, and tomatoes with 2-3 tablespoons of the Baconnaise. Arrange the cucumber slices on a platter, and top each round with a heaping spoonful of the bacon mixture.
