Slow Cooker Salsa Chicken

This recipe calls for 2 tbsp taco seasoning but I don't like that flavor. This recipe is very low in fat and calories and still very tasty.

Ingredients
2
lb (32 oz) chicken breasts, boneless and skinless cut into 2 inch cubes
1
cup salsa, homemade or purchased
1
cup petite diced canned tomatoes
1
cup onions, diced fine
1/2
cup carrots, shredded
3
tbsp sour cream, reduced fat (if desired)
2
medium potatoes, cubed (optional)
Directions
1.
Place the chicken in a slow cooker.
2.
Layer the vegetables over the chicken (here is where you would sprinkle the 2 tbsp of taco seasoning if you desire.)
3.
Pour salsa on top of the vegetables.
4.
Pour 1/2 cup of water on top of the salsa.
5.
Set cooker on low for 6-8 hours.
6.
When ready to serve, stir in the sour cream.
7.
Makes 8, 1 cup servings.
