Roasted Italian Vegetables

You can use one or two or all the recommended vegetables for this dish.

Ingredients
6
cups of assorted cup up vegetables such as: onions, mushrooms, potatoes, broccoli, cauliflower, zucchini, bell pepper (red, green or yellow), carrots
1
tsp garlic powder
1
tsp italian seasoning
1
tsp oregano leaves
1/4
tsp salt
1
cup shredded mozzarella cheese (optional)

tbls olive oil
Directions
1.
Place cut up vegetables in 9 x 13 inch roasting or shallow pan
2.
In a measuring cup, put olive oil and seasonings together and pour evenly over vegetables.
3.
Toss to coat.
4.
Roast in oven at 450 degrees for 30 minutes.
5.
If adding cheese, sprinkle over vegetables during last 5 minutes of baking.
