Twice Cooked Potatoes

THis is a tasty way to do potatoes. They don't need gravy or added butter when on the plate. Eat as is.

Ingredients
4
potatoes - cubed (more or less depended on amount of people eating)
parmesan cheese
garlic powder
italian bread crumbs
salt and pepper
Directions
1.
Place cubed potatoes in pot of water.
2.
Bring to a boil.
3.
Lower heat and cover and simmer for 20 minutes or until soft.
4.
Drain off water and place potatoes in 1 - 2 quart casserole dish
5.
Sprinkle generously with garlic, cheese and bread crumbs (salt and pepper to taste)
6.
Sprinkle olive oil on top
7.
Bake 400 degrees until done. (Top turns slightly brown and bubbly)
