Avocado Lime Cilantro Rice

This beautiful green rice is not only eye catching but muy delicioso (that’s “very delicious” to you and me)! The standard Spanish rice will be forgotten once you serve family and friends this updated version that is easy and healthy.

Serves 8people
cups basmati or jasmine rice
jalapeno pepper, seeded
medium bunch cilantro, washed, dried, bottom of stems trimmed and the rest coarsely chopped (reserve 1/2 cup for serving)
garlic cloves, peeled and coarsely chopped
1 1/2
tsp coarse salt
Zest from one lime
Juice from 1 lime (about 2 tablespoons)-divided
tbsp olive oil
tsp cumin
medium avocados
Place the rice in a pot and cover with water. Soak for 5 minutes, then drain in a fine-mesh sieve, rinsing until the water runs clear. Set aside to drain.
Place the jalapeno, ½ cup water, cilantro (hold back 1/2 cup of chopped leaves for serving), garlic, and salt in a food processor and process until smooth. Add half the lime juice, then transfer to a liquid measuring cup, and pour in enough water so that the total amount of liquid is 4 cups.
In a medium saucepan with a lid, heat the oil over medium-high heat. Add rice and cook, stirring, for another 3 minutes or so, until the rice grains have turned opaque.
Add the green liquid and bring to a boil (you can raise the heat). Then cover the pot and reduce the heat to the lowest possible setting. Cook per package directions (30-40 minutes), until the rice is tender. Turn off the heat but keep the pan covered and let it rest for 5 more minutes.
Meanwhile, mash the avocado in your serving bowl. Stir in the lime zest, the remainder of the lime juice, cumin, salt & pepper. Stir in hot rice until well coated and add cilantro before serving. Enjoy!
