Baked Sweet Potato Chips (Kumara Chips)

Did you know sweet potatoes are referred to as kumara in New Zealand? Kumara chips sound so fancy, I like it! So if you want plain ol’ potato chips, go ahead, but these sweet potato chips (kumara chips if you’re feeling fancy :), will have you doing a happy dance.

Ingredients

medium sweet potatoes
2
tbsp Avocado Oil (for higher burn point, can sub coconut oil)
Seasonings of your choosing ( I used Italian herbs, garlic salt and pepper). Try jerk seasoning or other blends for variety
Directions
1.
Slice potatoes long ways with a mandolin (mandolin is essential here because the potatoes will crisp at different rates (read BURN) if the aren’t same thickness. Then rinse the slices with cold water, and dry them with a paper towel. Add the oil, seasonings and mix well to coat evenly.
2.
Put them into 400F oven for 10 mins, then flip over all of them and bake for another 4-6 mins until they become golden brown. **Some of them may turn brown faster, so keep an eye on them.**

Yummy healthy crispy potato chips-Enjoy while they’re warm!
