Salmon Tartar On Cucumber Appetizer
These are gluten free appetizer marvels – they taste fresh like Spring and delight the taste buds. With the healthy Omegas of salmon the crispy texture of cucumber and subtle Asian flavors, they are a hit and quickly devoured.
Togarashi (Japanese seven flavor chili pepper) – about 1 Tablespoon
black sesame seeds, optional
Directions

In a medium bowl, mix together salmon, scallions, soy sauce, mirin and sesame oil. Trim ends of cucumber. Using a vegetable peeler, peel a 1/4″ strip of the cucumber lengthwise. Repeat around the cucumber, leaving a 1/4″ strip of peel between. Spoon Salmon Tartare on top of cucumber rounds, then sprinkle some Togarashi and black sesame seeds on top to garnish. Serve immediately.
