Spicy Curry Cauliflower Rice

So simple, tasty and a wonderful way to eat some cauliflower (even hubby was fooled and loved it!). Here is a great alternative to the typical grain that is healthy and quick and very customizable. Make this into a meal by adding more veggies, legumes, gluten free pasta, or whatever your heart desires.

Serves 4people
large head of cauliflower (or you can purchase cauliflower rice)
bunch scallions (or onion)
cups of kale, spinach, broccoli, (any greens of your choice)
garlic cloves (crushed)
olive oil
curry powder
cayenne powder and crushed red pepper flakes (optional, only if you like it spicy!)
smoked paprika
Lightly sauté the scallions in olive oil, I used only 1/2 tbsp, use your preference. Add garlic and crushed red pepper, if you’re adding.
In the meantime, put the cauliflower in a food processor and blend until a rice-like consistency has been reached. Don’t over do it will become cauliflower mash (still edible though).
Add the cauliflower to the pan once scallions have softened a bit. Add 1/4 water (or oil if you prefer) and sauté over medium-low heat.
Add in your greens, curry powder and smoked paprika. I prefer my veggies to have a slight crunch so it only took about 10 minutes to cook.
I finished the dish with mint chutney since I had some on hand but any fresh herbs (cilantro, parsley, mint) to brighten flavors and garnish. Enjoy!
