Bayou Salad With Poppyseed Dressing

This salad was from a Louisiana based restaurant in San Diego many years ago. I remember how excited mom was to obtain the coveted recipe - this is one of those salads that has everything, tangy, sweet and satisfying.

Ingredients

head red leaf lettuce
1
can (12 oz) of mandarin oranges, drained
1/2
lb of chopped pecans
Poppyseed Dressing:
1
cup Oil
3/4
cup Vinegar white, apple cider, or raspberry
1/3
cup grated onion
1/3
cup Sugar
2
tbsp Poppy Seeds
2
tbsp Dried Mustard
2
tbsp warm water
1
tsp Salt
Directions
1.
To make dressing: in a bowl or jar, mix warm water and mustard. Then add oil, vinegar, sugar, poppy seeds, grated onion, and salt. Shake well. Refrigerate until ready to use.

Place red leaf lettuce in a large salad bowl. Top with mandarin slices and pecans.
3.
Drizzle with poppy seed dressing. Toss well and serve immediately.
