Potato Salad

This is my absolute favorite potato salad! It has all the components to make a star side dish or (like me) you can just eat it as a meal!

Ingredients
1
dozen pasture raised eggs
1
lb Bacon chopped
1-2
bunches green onion chopped
5-10
lb organic potatoes * Can substitute sweet potatoes (white are best)
Banana Peppers chopped (to taste) (I add a little juice too)
Best Foods Mayonnaise & Kraft Fat Free
Salt and Pepper
Directions
1.
Boil eggs and let cool.
2.
Cube potatoes and peel (or leave skin on and wash well) potatoes and boil until soft, let cool.
3.
Bake or fry bacon, let cool and chop into bite size pieces.
4.
Peel and chops eggs in a separate bowl
5.
Combine the rest of the ingredients adding tablespoons of mayonnaise until desired creaminess is achieved.
6.
Salt and Pepper to Taste.
7.
Refrigerate until read to serve, enjoy!
