Mango/Black Bean Salad

Ingredients

large diced mango

tbsp fresh lime juice
3
tbsp water

tbsp olive oil
1/2
tsp cumin
1/2
tsp salt
1
can (15 oz) black beans drained & rinsed
1
cup diced tomatoes
1/2
cup diced sweet onion
1/4
cup chopped cilantro
1
tbsp minced jalapeño
Directions
1.
In a large bowl mash 1/4 cup mango with a fork.
2.
Whisk in lime juice, water, oil, cumin & salt.
3.
Add remaining mango, beans, tomato, onion, cilantro & jalapeño. Toss to coat.
4.
Serve immediately or up to 1 day refrigerated.
