Aunt Dena’S Italian Sausage Soup

Several years ago, Andy stayed with us for about six months. While he was here he had some favorite recipes and this soup is one of them.

Ingredients
1
lb Italian sausage, either link, cut in slices, or bulk
4
cloves fresh garlic, minced

onions, chopped
1
can (16 oz) chopped tomatoes
1 1/2
qt canned beef broth
1 1/2
cups red wine (or you can use water)
1/2
tsp basil
1/2
tsp thyme
3
tbsp chopped parsley
1
green pepper, chopped
2
zucchini, sliced
3
cups uncooked farfalle (bow-tie noodles)
parmesan cheese, grated, to sprinkle on top
Directions
1.
Brown sausage and drain the fat.
2.
Add garlic and onions; cook until clear.
3.
Stir in tomatoes, broth, wine, and herbs.
4.
Add veggies and noodles.
5.
Cover and simmer 25 minutes.
